The Secret to a Great Homemade Chicken Burger

Ingredients:
For the Chicken Patty:
1/2 boneless chicken fillet
1 tsp fresh ginger-garlic paste
2 finely chopped onions
2-3 green chilies
A handful of fresh coriander and mint
1 tsp salt
1/2 tsp red chili powder
1 tsp chili flakes
1/2 tsp cumin powder
A pinch of black pepper
1/2 tsp oregano (optional)1 lemon (or 1 tsp vinegar)
1 tsp chili sauce (optional)
1 tsp soy sauce (optional)
2 slices of bread
For the Crispy Coating:
1 cup all-purpose flour
1/4 cup corn flour
1 tsp salt
1/2 tsp red chili powder
A pinch of cumin
A pinch of turmeric
Water
For the Special Sauce:
4 tbsp mayonnaise
A pinch of oregano (optional)
A pinch of chili flakes
A pinch of garlic powder
1 tbsp ketchup
1 tsp mustard powder (optional)
For the Burger Assembly:
Burger buns
Salad leaves, onions, cucumber (or your choice of toppings)
Instructions:
1. Make the Chicken Mixture: Put the half chicken fillet, fresh ginger-garlic paste, chopped onions, green chilies, coriander, and mint into a food processor. Add all the spices (salt, red chili, chili flakes, cumin, black pepper, oregano) along with the juice of one lemon (or vinegar) and the sauces. Lastly, add the two slices of bread.
2. Mix into a Smooth Paste: Blend everything until you get a smooth, firm, and dry mix. The bread makes the patty soft and juicy, while the dry texture makes it easy to shape. If the mix is too wet, add a few breadcrumbs.
3. Shape the Patties: Grease your hands and make the mix into medium-sized patties. For best results, put the patties in the freezer for about 5 minutes to make them firm. This stops them from falling apart when you cook them.
4. Make the Coating Mix: In a bowl, mix the all-purpose flour, corn flour, salt, red chili powder, cumin, and turmeric. Mix well.
5. Coat the Patties: First, cover the patties with the dry flour mix. Then, use the rest of the dry mix to make a thick batter by adding water (it should be thick enough to cover your finger). Dip each flour-covered patty into this batter.
6. Cook the Patties: Heat oil in a pan on medium-to-high heat. Once hot, add the patties and immediately turn the heat to low. Cook the patties on a low flame to make sure the chicken is cooked all the way through and stays juicy.
7. Make the Special Sauce: In a small bowl, mix the mayonnaise, oregano, chili flakes, garlic powder, ketchup, and mustard powder. Stir well until it's smooth.
8. Put Your Burger Together: Toast your burger buns. Put a good amount of the special sauce on both sides. Place your salad toppings on the bottom bun. Add the perfectly cooked chicken patty, then top with another layer of the special sauce. Put the top bun on to finish your burger.
